One of our simplest recipes. Salmon blackened on the skillet to perfection using Voodoo's Blackening Rub and Signature Spice.

1 TBS Voodoo Signature Spice
4 TBS Voodoo Blackening Rub
2 TBS Olive Oil
2 TBS Unsalted Butter
1 wedge Lemon Wedge for serving
Fresh Parsley for Garnish

Instructions

Prepare the Salmon: Pat the salmon fillets dry with paper towels. If your salmon has skin, you can choose to leave it on or remove it, depending on your preference.Season the Salmon: In a small bowl, combine the Voodoo Signature Spice and Voodoo Blackening Rub. Sprinkle this spice blend evenly over both sides of each salmon fillet, pressing the spices into the fish to adhere.Preheat the Skillet: Heat a large, heavy-bottomed skillet (preferably cast iron) over medium-high heat until it's very hot, almost smoking.Cook the Salmon: Add the olive oil to the hot skillet and swirl to coat the bottom. Carefully place the seasoned salmon fillets in the skillet, presentation side down (if the salmon has skin, place the skin side down). Be cautious as the spices may cause some smoke when they hit the hot pan.Blacken the Salmon: Cook the salmon for about 3-4 minutes on the first side without moving it. You want the spices to blacken and create a flavorful crust. Carefully flip the salmon fillets using a spatula and cook for an additional 3-4 minutes on the other side, or until the salmon is cooked to your desired level of doneness. The salmon should be opaque and flake easily with a fork.Finish with Butter: In the last minute of cooking, add the butter to the skillet and let it melt, basting the salmon with the melted butter. This adds richness and a glossy finish to the fish.Serve: Transfer the blackened salmon to serving plates. Squeeze fresh lemon juice over the fillets and garnish with fresh parsley if desired.
